One Perfectly Chilled Out Recipe for National Watermelon Day

Do any of us really ever need an excuse to eat chilled, refreshing watermelon on a hot summer day? Well, just in case you do, here’s a great one: It’s National Watermelon Day. Make the most of it with the following delicious watermelon salad recipe—a perfect dish for dinners on steamy nights, and an equally perfect one for eating deliciously but healthfully.

Here’s why: watermelon is roughly 92% water, so it’s a great hydrator and diuretic. It also consists of approximately 12% fiber, and is high in vitamin C and A. Big levels of both C and A like these are known to reduce the risk of heart disease and colon cancer and improve asthma. Watermelon’s also a huge source of lycopene, which means it has the added benefits of antioxidants and multiple cancer-preventing properties.

So dig and chill out by whipping up this easy salad tonight:

Ingredients:

1 large seedless watermelon

1 sweet onion

¼ cup red wine vinegar

Salt and pepper

½ cup extra virgin olive oil

2 tbsp. chopped fresh mint

2 oz. crumbled feta cheese, if desired

To make:

Cut the melon into bite sized pieces, and set aside. Peel and dice the onion.

In a bowl, combine the vinegar, salt, pepper, and mix. Slowly whisk in the olive oil in a small, steady stream. Add in the chopped mint and mix.

In a larger bowl, combine the melon, onion. Pour the dressing over the melon and toss gently until everything is coated and evenly mixed. If desired, sprinkle with the feta. Serve cool or chilled.
