National Ice Cream Day: The Healthy Version

Happy National Ice Cream Day! (It was this past Sunday, July 19th, in case you missed it). The obvious way to celebrate it is to grab a cone of your favorite cold stuff and get licking. But here at Nourish Your Soul, we’re taking a healthier approach; we’re making our own cold-pressed juice and nut milk popsicles!

Our cold-pressed popsicles are a nutritious, tasty treat with all-natural ingredients and no added sugar. Below are the recipes, and you’ll see that we’ve added gelatin to them, which keeps the popsicles from melting too quickly and adds a bit of protein. We’ve shared our favorite popsicle molds, but you can also use dishes or recycled containers that you already have at home, too. (Small juice glasses, recycled yogurt containers, and ice cube trays make great molds.) Straws are also a great replacement for the popsicle sticks. Enjoy!

Supplies:

Pineapple, Pear & Mint Cold-Pressed Juice Popsicle

This is the perfect barbecue popsicle! We’ve heard that our PPM juice tastes like sunshine in a bottle….

Heat the water in a saucepan and add the gelatin. Mix for five minutes until the gelatin dissolves. Mix with the PPM juice. We recommend using a pitcher to mix the gelatin in with the cold-pressed juice. Set your popsicle molds up on a baking sheet to avoid sticky messes. Pour the juice mixture into your popsicle mold and freeze for 5-10 hours.

Watermelon Mint Cold-Pressed Juice Popsicle

You can jazz this popsicle recipe up by including mint leaves with the watermelon mint cold-pressed juice.

Heat the water in a saucepan and add the gelatin. Mix for 5 minutes until the gelatin dissolves. Remove from the saucepan and pour into a juice. We recommend using a pitcher to mix the gelatin in with the cold-pressed juice. Set your popsicle molds up on a baking sheet to avoid sticky messes. Pour the juice mixture into your popsicle mold and freeze for 5-10 hours.

Cold-Brew Vanilla Coffee Popsicle

Remember coffee milk? This is the healthy version. The ingredients in our vanilla coffee milk are a refreshing cold-brewed Chilmark coffee, cashews, sea salt, vanilla, dates, and filtered water.

Set your popsicle molds up on a baking sheet and pour the Vanilla Coffee mixture into your popsicle mold and freeze for 5-10 hours.
