Another Great Post-cleanse Meal

So you’re nearing the end of your cleanse (or are thinking ahead to when you will be)? Transitioning back to everyday healthy eating doesn’t have to be tricky; it can actually be pretty darn easy and downright delicious.

Take, for example, this fresh springtime favorite that we love at Nourish Your Soul. It employs unsweetened coconut milk instead of the unusual milk or cream, which keeps things light and healthy. The whole thing takes less than 30 minutes to make, and can be done days ahead of time so when you need a simple meal, just open the fridge and reheat. That also makes it the perfect dish to incorporate into your #springfittraining regimen. Enjoy!

Coconut Cod Chowda

Makes 4 servings

Ingredients:

1 lb. wild cod (cut into squares)

1 can unsweetened coconut milk

1 fresh lemon

2 tbsp. butter (preferably grass-fed, if available)

1-2 cups fresh kale

1 cup string beans (cut in halves)

1 tsp. coconut oil

A handful of chopped cilantro, if desired

 

Directions:

Cut the wild cod into 1-inch squares and put aside.

Place coconut oil in a wok over low heat until it starts to melt.

Place the cod in the over medium heat. Squeeze the entire lemon over the cod and let it cook for 3 – 5 minutes until golden.

Add in the coconut milk, kale, and string beans. Bring the heat up to high and let come to a boil.

Add in the grass-fed butter and bring back down to medium heat. Let simmer on low for 3 minutes.

Serve with chopped cilantro on the side for sprinkling.

Eat immediately or store in the fridge for up to 2 days.
